Tuesday-Friday 10am-7pm, Saturday 8am-5pm.
Like any other store. It's not really a "farmer's market", it's a bazaar - a store. Keep store hours.
Use the glassed-in area for a true traditional local produce market Wednesday/Saturday 7am-2pm. Use the opening glass to expand it in the summer just like the produce selection does. Anybody who doesn't want to keep full hours should just get a stall in there. Iirc, Waterloo does this - the "Market within a market" approach.
